Award Winning Chef Peter Kuruvita launches New tea inspired Valentine’s Day Menu at t-Lounge by Dilmah at Ibn e Batuta Mall, Dubai
Award-winning Chef turned TV presenter and author, Peter Kuruvita dazzled the tea enthusiasts in Dubai with the tea-inspired delectable fare, he created at t-Lounge by Dilmah Dubai. Wowing the patrons at t-Lounge by Dilmah in Ibn Battuta Mall, Dubai, the celebrity chef pulled out all the stops in an effort to educate everyone with ‘Tea Gastronomy’ as well as the launch of a new menu. To celebrate the launch, Kuruvita and his team served a specially curated ‘tea-inspired’ Valentine’s day menu depicting the revolution of tea in the field of innovative cuisine and gastronomy.
Brand ambassador to Dilmah Tea for many years, Peter Kuruvita has always been a huge advocate of tea gastronomy and a big fan of the different blends from Dilmah. Tea gastronomy refers to the concept of bringing together the unique flavor of a popular historic beverage with creativity and innovations of modern cuisine. The new menu represents a careful selection of dishes that are created with tea and paired brilliantly with the exclusive selection of tea available at the lounge.
As part of the event, Peter outdid himself with fresh salmon smoked with Dilmah’s supreme Ceylon tea and mesquite woodchips, served in a unique preparation. His second preparation was an inspiring addition to Colombo’s sushi scene in the form of Dilmah’s gentle Ceylon green tea infused Onigiri and lagoon prawns. For dessert, the chef served up a storm with a smooth chocolate and chai mousse, flavored with fragrant chai spices and Ceylon cinnamon and vanilla bean infused doughnuts topped with Earl-Grey infused glaze. The dishes were created using Dilmah tea, taking familiar flavors to increased heights never known to man before. These dishes also highlighted the versatility of tea as an ingredient.
Talking on the launch event, Chef Peter Kuruvita said, “My association with Dilmah Tea has been a journey in creativity, innovation and loads and loads of research. It is amazing that Dilmah tea is still hand-picked and not processed by mechanical crushers. Creating this new menu has been a challenge in itself and I’m proud to be associated with it. You have to understand that infusing the flavor of tea into food requires consideration about the palate and flavours and therefore requires precise measurement of brewing time – too little and you get nothing and too much you’re left with too much tannins and bitterness.”
The Dilmah t-Lounge was first conceptualized in 2003 and the first ever outlet opened in Colombo.
