Humble, warm and with an idiosyncratic approach to cooking, Chef Sweety Singh cooks how potentially your mothers and nanas must have had back in the days. The wafting aroma emanating from his recipes with homemade and fresh Punjabi spices makes it a trip down memory lane, where you feel like sitting amidst a huge family of uncles and aunts, chowing down a hearty meal made with the simplest ingredients and much love.
Chef Harjinder “Sweety” Singh, (the name Sweety was given to him by Gautam Anand, General Manager of Sheraton ITC Hotels) consider himself a purist when it comes to cooking. But unlike a pedant he works with a more innate approach to cooking which involves recipes learned by his father, involving all senses and using fresh local produce.
Having risen to the status of being an authority of Punjabi Street Food across India and abroad, Chef Sweety Singh is a gifted culinary artist, who believe in a pretense-free food, with fresh ingredients prepared in such a way that assures a homelike authentic Punjabi feel.
Medley Restaurant at Pullman Deira City Centre, is a lovely casual diner serving interactive international cuisine. The restaurant’s many famous nights bring the true essence of regional/global cuisine to a level of unmatched authenticity. Chef Sweety Singh recently bought his original flare to Medley Restaurant with Art of Spice festival, that served original Punjabi Cuisine. We were invited to experience the Picante taste of the quintessential Punjabi food and the exquisite atmosphere of Medley Restaurant.
The restaurant is expansive yet inviting with subtle elements of the cuisine type on offer. Since we were out to try the Art of Spice Punjabi food night, we were bedazzled by the colorful mix of eclectic accents throughout the restaurant’s large buffet spread. From the starters to the appetizers the taste exuded the true spirit of Punjab. Nothing was pretentious and everything was simple. We loved the Indian Punjab style Lentil soup which was slurpy and grainy at the same time. While the BBQ items were a hit amongst the meat lovers, I was captivated by dishes like Mutton Pulao, Saag Ghost, and Lahori chicken. The dishes had a character which is often lost in the fancy exterior of the place. It reminded me of the food my Grandmother cooked, without the deception of packaged masalas or spices. Simple yet delicious to the point that you just don’t want to stop. To top it off last but not the least Chef Sweety’s Dal Halwa and Gulab Jaman was pure pleasure.
All the dishes at Medley Restaurant, Pullman Deira City Centre are part of a summer overhaul of the current menu and have been selected as they are authentic slow-cooked dishes which are made in homes across the world. They are packed full of flavor and unique in taste.
Besides the Indian cuisine, the restaurant also serves Italian, American, French or East Asian – cuisines on different days. The array of international favorites is as abundant as it is colorful letting the hunger guide you to the open kitchen of your choice.
Guests can visit Little Italy for pizza, pasta, and panini. Some of Medley’s house specialties are mezze platters, mixed grills, Caesar and Niçoise salads, juicy burgers or Indian curries.
