Mango Delight – Recipe
Mango is one of the most exotic, meaty, and delectable fruits, particularly indigenous to south Asian climate. It’s a summer fruit and what better way to enjoy the soft, pulpy, juicy fruit than a sweet and creamy mango dessert. Bon Appetit!
Mangoes: 3 to 4
Milk: 5 cups
Cornflour: 5 tbsp
Condensed milk/ caramelized condensed milk : 3 tbsp
Mango jelly: 1 packet
Digestive biscuits/Marie biscuits: 1 packet
Mango juice:1 cup
Prepare white custard. In a bowl dissolve 5 tbsp of cornflour and 6 tbsp sugar in 1/2 cup of milk and form a slurry.
Next in a separate saucepan take 4 1/2 cup of milk and heat it until it’s about to boil. While boiling add 2 tbsp of sugar. Add the slurry in the warm milk and stir continuously. When it gets thickened add 3 tbsp of condensed milk and 1/4 cup of cream and cook well.
Let the custard cool completely.
Prepare jelly as per the instructions on the packet.
Layers the biscuits at the base of the bowl, and pour some mango juice over it.
Place mango slices over the biscuits.
Next pour the cold custard on top of the slices.
Again layer sliced mangoes on top of the custard.
Then cover the mangoes with the mango jelly.
And finally, decorate the dish with the whipping cream.
